Hey guys. Welcome back to my pretend cooking show. Today we are making one of my kids' favorite pasta. This is a roasted butternut squash pasta.

So good, so good for fall. It's also gonna have some red onion and some garlic. We're gonna toss everything in a little bit of salt and pepper and olive oil.

I have left the skin on here and I will go ahead and remove that after it cooks, cuz it comes up very easily chopped up the rest of my ingredients, my red onion.

And we're gonna make this cute little foil pack with our garlic. We're gonna go ahead and put a little more olive oil in there and close that up.

All right, first thing we're gonna do is start by roasting our squash. Since this takes a little longer than the rest of our ingredients, I'm gonna roast this at four 50 for about 10 minutes and then when that's done, I will take it out, flip it over, and get ready to add the rest of my ingredients.

If you can find already cut up butternut squash, that will make your life even easier and you can go ahead and just roast everything together.

Um, but I was too lazy to, uh, peel this squash and cut it up today. So, <laugh>, this is the, the method that we are taking.

All right, let's add the rest of our ingredients now that we've flipped over our squash. And we're gonna cook this all for another 15 minutes in the oven at 450 degrees.

And until it gets nice and brown and bubbly and caramelized, it smells so good. Smells like a fall in my house.

Hmm. Okay, now we are gonna take all that, throw it in the blender, add a little butter. I'm not sure if we can call this a healthy recipe.

It's got a good amount of butter and olive oil in it. Um, but you know, it's CED full of vegetables and produce and there's the finished product.

Let's see how our critics feel about this. All right, I think they like it. Thanks guys. Bone petite appetite.
