You will tap on the email you want to open. You can then look at the bottom of the screen for your three choices: reply (to sender), reply all ( to sender and everyone else the email was sent to ) and forward (sending the email to someone else). Once you tap on what you want to do you can begin typing in the compose area. Once you are done you can tap on the paper airplane or blue arrow at the upper right of the screen to send. If you made a mistake you can tap undo on the black line at the bottom of the screen and it will not send.
