In Settings under Processor Settings, Animal, the creator turns on Auto Schedule Harvest and Cut Dates for Beef, sets Thank Our drop off to one day before the harvest date, and enables Configurable Hangtimes. The cut date field is removed and replaced with hang options offered at booking, including 7, 14, and 21 day hangs with defaults set to seven days. The 14 day hang adds a $25 upcharge and the 21 day hang adds a $50 upcharge.
